Asian in Lombok mostly means Indonesian, and the island's own Sasak cooking is the reason to come hungry. In Mataram, Sate Rembiga Ibu Sinnaseh chars beef soaked in Lombok spices, chilli and palm sugar, with no peanut sauce and rice, lontong or plecing on the side. Near Senggigi, Dapur Ina cooks ayam taliwang and charcoal grilled snapper under the trees, and Kokok Pletok at Hotel Tugu Lombok serves Indonesian dishes under a vast thatched roof on Sire Beach.

Kuta Lombok has the widest spread. Pawon Nusantara cooks rendang, tongseng and ayam betutu from across the archipelago, Warung Flora wraps ikan pepes in banana leaf, and Warung Ombak and Warung Lamina keep plates cheap. Jiang Nan goes to Sichuan for cumin lamb noodles and mapo tofu, and Three Sisters Dumpling Bar near Selong Belanak steams dumplings inspired by Chinese street food.
