Francis Tolentino, the chef behind the Michelin selected Taupe, opened Cerulean in July 2026 on the second floor of The Shops at Ayala Triangle Gardens. The menu puts Philippine seafood first, shaped by Chinese and Southeast Asian flavours: crab chawanmushi, tuna collar estofado, scallop claypot rice, even an uni ice cream sandwich. Tasting menu or à la carte, in Makati.

Had such a wonderful dining experience at Cerulean 🤍 Everything felt so well thought out, from the interiors to the menu itself. The concept and attention to detail really made the whole experience feel elevated without being intimidating. The seafood was fresh and every dish was mouthwatering. 🤤 My personal must-tries are the Scallop & Crab Mantou Brioche, Tiger Prawn Sambal Pasta, Pepper Shrimp Rice, and the Shrimp Basque Cheesecake for dessert. (Definitely enjoyed their shrimp🤭) The staff and service were also incredibly kind and welcoming, which made the whole experience even more memorable. Definitely one of the most memorable meals I’ve had recently. Will absolutely be back soon! 🌊🩵

Cerulean is one of the most exciting new restaurants I’ve visited recently. Chef Francis Tolentino’s menu is bold, creative, and full of unexpected combinations that somehow work beautifully together. My favorites were the Jellyfish Laksa, Chili Aligue Prawns with Focaccia, Tamarind Glazed Gindara Belly, and the Chipirones Claypot Rice. For dessert, the Shrimp Basque Cheesecake and Crab Mango Rice Cream were both standouts and unlike anything I’ve had before. Wasn't able to take photos of the Jellyfish Laksa, Chipirones Claypot Rice, or Crab Mango Rice Cream because we were too excited to start eating as soon as they arrived. Beyond the food, the service was excellent and the atmosphere felt warm and welcoming. It has the quality and creativity of fine dining without the stiffness, making the whole experience feel approachable and enjoyable. Already looking forward to my next visit!

Our family of four (kids aged 11 and 8) had lunch here, and really enjoyed our dining experience. Very fitting for the special occasion we celebrated. The food was delicious, and unique vs other restaurants we've tried. We particularly enjoyed the scallops dumpling, blue crab ramen, tuna collared estofado and palapa-smoked maya-maya. The staff was very helpful and very knowledgeable about the menu, so they were able to help us pick out the best dishes for each one of us. The dining interiors were beautiful and added to the overall ambiance of the meal experience. Prices are on the high side but this is expected for the overall experience that you get. Well done!

The seafood was fresh, perfectly cooked, and seasoned in a way that enhanced its natural flavors without overpowering them. Each course demonstrated refined techniques while remaining approachable and satisfying. The service was equally impressive.
