Hapag

Asian · Fine Dining · Restaurant · Makati · $$$$

Hapag takes its name from the low Filipino family table, and sits on the seventh floor of The Balmori Suites in Rockwell, Makati. Chefs Kevin Navoa and Thirdy Dolatre, who began it as private dining, build each tasting menu around one region after research trips; the Cordilleras menu draws on Ifugao, Kalinga and Mountain Province. Modern Filipino fine dining, with one Michelin star.

Wanting an elevated dining experience in Manila, I chose to dine at Hapag — and it has been quite some time since I’ve been this thoroughly impressed by a restaurant in every aspect. The experience is truly deserving of its accolades. I especially appreciated how the menu highlighted cuisines from a specific region of the Philippines, with the chef drawing on personal travel experiences to thoughtfully recreate the flavors, stories, and spirit behind each dish. Every course was delicious, creative, and memorable, even with the kitchen’s gracious accommodations to my food preferences. The wine pairing was beautifully executed and enhanced the overall experience. Being invited to walk through the kitchen and meet the team added a personal touch that made the evening feel intimate and special. My only minor complaint was that the dining room was quite cold; however, the staff immediately offered me a shawl to keep warm, which reflected their attentiveness and care. Thank you for such a wonderful dining experience — I look forward to returning to try another creative menu in the future.

We had an amazing dinner at Hapag with my family! Every dish was full of flavor and had its own story that showed the culture it came from. Chefs Thirdy and John did such a great job putting everything together. The wine pairing was exceptional each selection complemented the flavors flawlessly. Somm Erin was wonderful, guiding us through each pairing with deep knowledge. Hapag truly deserves its Michelin star! We can’t wait to come back and try dishes from a different region next time.

I’ll admit I was a bit hesitant at first — another Filipino tasting menu, I thought, and I wasn’t sure it would hold my attention. I’m really glad I pushed through. Of all the Michelin-recognized restaurants in Manila, Hapag is the one that truly earns its place. Having been to quite a number of tasting menus, this ranks among the best — and not just for the food. The hospitality is genuinely warm, the servers are attentive, and you feel it throughout the meal. It’s the kind of place where the service is as intentional as every dish on the table. I went with the Cordillera menu, and it did not disappoint. Each course brought me right back to my North Loop experience — the flavors, the story, the spirit of it. They managed to capture something deeply rooted and transport you there, but in the most refined, elevated way possible. Hapag is the real deal.

We celebrated my husband’s birthday at Hapag, a Michelin-starred restaurant that highlights Philippine regional cuisines through rotating tasting menus. We tried the Cordillera tasting menu, and from arrival everything already felt warm and intentional.. from the introduction to the ingredients to a brief tour of the open kitchen where we saw the chefs at work. Being from Region 2 which is relatively close to the Cordilleras, we were both excited and curious about the menu. We were pleasantly surprised. It felt respectful to its roots while being creative. Every course was beautifully executed. Everything was perfect, and it made the celebration truly memorable. We truly hope that Hapag continues what they do as we’d love to come back whenever the menu changes to explore more of their take on Philippine regional cuisines. Wishing them even more Michelin stars in the years ahead!
