Sasak Food in Lombok
Sasak cooking is Lombok's own, and it is built on chilli. Ayam taliwang is young chicken grilled over coals and served with a fierce sambal. Plecing kangkung is water spinach with a fiery sambal. Sate Rembiga, named after a Mataram neighbourhood, is beef soaked in spices, chilli and palm sugar, then charred, with no peanut sauce. Sate Rembiga Ibu Sinnaseh, a roadside warung on Jalan Dr Wahidin in Mataram, is the place to try the satay where it was named. Order it with rice, lontong or plecing. Near Senggigi, Dapur Ina cooks the whole repertoire in a village kitchen under the trees: ayam taliwang, sate Rembiga, plecing kangkung and whole snapper grilled over charcoal with sambal. In Kuta Lombok, Warung Flora is the friendly local choice, with ayam bakar taliwang and ikan pepes steamed in banana leaf. More Mataram taliwang houses will join this guide as we confirm them. This is an early list, opening for diner votes, and positions cannot be bought.
