【Experience the pinnacle of Japanese cuisine (⑉• •⑉)♡ Yoshiaki Hoshino's delicate and meticulous techniques establish a unique deliciousness♡ A collection of exquisite dishes that evoke the feeling of early summer will bring smiles to your face (*^^*)】 ⁡ A master of Japanese cuisine who brings out the deliciousness of ingredients to the fullest My first visit to "Shinbashi Hoshino"⭐️ ⁡ Owner Yoshiaki Hoshino trained for 12 years at the now-closed famous restaurant "Kyomi" before opening his own restaurant in 2012. ⁡ He reconstructed that taste after refining it with his own sensibilities. By collaborating with ingredient producers and maximizing the potential of seasonal ingredients and applying delicate and meticulous techniques to define their flavors, he has established an extremely simple yet unique deliciousness. ⁡ This time, I enjoyed the early summer course. ⁡ --Time of Visit-- ⁡ Weekday Dinner ⁡ --Reservation-- ⁡ Reservation Made (Invited by a Regular Customer) ⁡ --Scene of Visit-- ⁡ With a Friend (2 people) ⁡ --Cost-- ⁡ ¥60,000-¥65,000 ⁡ --Meal Details-- ⁡ ▶Hyogo Prefecture Sanda Water Shield Sanriku Abalone The abalone was incredibly crunchy, the texture of the water shield was delightful, and it went perfectly with the acidity of the ponzu sauce (๑˙꒳˙๑) ⁡ ▶Lake Hamana Steamed Eel Rice You can feel the aroma of the eel, and the sweet and savory flavor of the fat oozes out... it's irresistibly delicious! ♡♡ ⁡ ▶ Rock Mushroom and Spinach with Sesame Dressing The soft flavor of the rock mushroom is wonderful, and the freshly roasted sesame seeds are fragrant and creamy! ⁡ ▶ Sweet Potato Simmered in Yoshino Style The crisp texture is pleasant, the kudzu starch sauce is thick and packed with the umami of the broth, and the ginger tightens the flavor perfectly (*^^*) ⁡ ▶ Chiba Prefecture Boso Black Abalone with Liver Sauce Steamed for 3 hours, it's soft and fragrant, and the umami is so concentrated it's delicious! ( *´꒳`*) ⁡ ▶ Hokkaido Nemuro Horse Dung Sea Urchin Jelly Served with broth made from grouper bones. The sea urchin has a firm texture and a strong sweetness, and combined with the gentle flavor of the broth, it's incredibly delicious ( ' ' )♡ ⁡ ▶Tempura ▫️Scallops The scallops are intentionally fried until fully cooked, concentrating their rich umami! The more you chew, the more delicious it becomes (○・∀・○) ⁡ ▫️Broad Beans A gentle sweetness spreads within the fluffy texture, and the more you chew, the fresh aroma gently wafts out♡ ⁡ ▶Grouper Sashimi Serve with salt, sudachi citrus, wasabi, and soy sauce to your liking. It has a firm texture, and the more you chew, the more delicious it becomes!! ⁡ ▶Soft-shelled Turtle Hot Pot Hattori-san's soft-shelled turtle, green onions, and mochi are served in a hot pot. The balance of everything is superb and it's incredibly delicious (⑉• •⑉)♡ ⁡ ▶Salt-grilled sweetfish from the upper reaches of the Katsura River in Yamanashi Prefecture The flesh is incredibly soft and fluffy, and I absolutely love the elegant umami and subtle bitterness ♡ The soft flavor pairs perfectly with the acidity of the tadezu (water pepper vinegar) (*'▽'*)♪ ⁡ ▶Deep-fried Kamo eggplant in broth The eggplant retains its texture, yet melts softly in your mouth ♡ You can taste the flavor, and the umami of the broth is absolutely amazing!! ⁡ ▶Conger eel and cucumber The temperature difference between the warm conger eel and the cold cucumber, the crisp texture, and the fusion of sweet, spicy, and sour flavors create a wonderfully delicious taste ♡ ⁡ ▶Clay pot rice, beef simmered in soy sauce, dried sardines with sansho pepper, and bamboo shoots Made with Hitomebore rice. The rice is cooked to a firm consistency, the grains are wonderfully distinct, and the sweetness is intense—it's absolutely delicious! (๑˙꒳˙๑) Eating it simply with wasabi salt brings out the sweetness of the rice. ♡ ⁡ ▶Egg over rice: Uji egg, bonito flakes Uji's Kyoto eggs don't have that strange eggy smell, so you can eat them smoothly and easily (○・∀・○) And the egg white is incredibly delicious! ♡ It has no unpleasant aftertaste and a clear flavor—it's truly delicious! !
