Ginza Kyubey

Japanese · Restaurant · Ginza · $$$$

Hisaji Imada opened Kyubey in Ginza's eighth chome in December 1935, and the house is credited with creating gunkan maki, the nori collared boat that keeps sea urchin and salmon roe on their rice. The Imada family still runs it, and the sushi counter remains a Ginza institution for Japanese omakase with a long memory.

The best sushi experience we have had. My family and I were honored to have eaten here while staying in Tokyo. Our sushi chef was great in explaining how to eat each item including background on which fish he is serving and why its so special. Each item in the omakase was artfully made and so delicious we savored each bite. We wished it never ended but also looked forward to the next item at the same time. A must go.

One of the best omakase experience and almost every single item was prepared with precision and thoughtfulness. I’d come back and visit this place for all the tokyo trips for sure. Please make sure you book way in advance. This place gets crowded.

If you’re accustom to omakase in LA, NY or even Vegas, it’s going to be a toss up if you genuinely enjoy this place. The flavors are very traditional Japanese, they weren’t to my liking. For 2 people was about 100k JPY. On the positive side, everything was fresh, clean and service was great; the owner even came out and introduced himself. I eat everything and have no allergies if that says anything, some of the stuff felt like a chore to eat. I spent about the same money in the fish market 10 minutes away, exactly what I wanted in terms of fish, super fresh quality, massive variety, totally satisfied, albeit in a no frills fish market environment.

I was lucky to get a last minute reservation via my hotel concierge on my last night in Tokyo. The lovely couple I sat next to at dinner even told me they had pre-booked months in advance due to it being so popular. By happy accident I was welcomed by the owner at the door and he gave me his “business card” which was a printed history of the restaurant and pictures of all the celebrities who had dines there. Beyond how special I felt this was also the best dining experience I had in Japan after visiting twice. Such an authentic experience and the kindest staff and chefs. As a foreigner visiting Tokyo sometimes I feel guilty about being in restaurants with locals (As a tall blonde lady I tend to stand out) and it’s easy to made feel out of place but I felt very welcome and appreciated. Could not have wished for a better way to end my visit.
