  • Got recommended by our friends to come here because they had a unique taste for having the truffle ravioli and they were Michelin starred. This place is by reservations only and it goes by fast. We reserved right away when the reservations were opened, it filled up almost instantly. When we got there at our reservation time, there was someone manning the door. Told us to wait outside since the inside was full still - gave us the menu to look at and shortly brought us in. We gave our orders right away and got our bowl of ramen quickly. We were in and out of there within 20 minutes or so. Since the place is so small, it was extremely quiet and no one was talking other than the staff. The ramen was good and ravioli was good by itself. I broke the ravioli and had it soaked in the broth for a bit - the truffle taste was way too strong and ruined the clear broth taste for me 🥲 but overall it was a good meal. I wouldn’t say it was that good to the point I would want to go all the time - Especially since it is so busy and reservation only. But if it’s a first timer, definitely go and try it out for the experience.

  • Top class experience. :) Broth excellent with quite unique taste actually very close to Polish rosół but high class rósł. Where you use a lot of meet. Super umami taste deep in the broth. Excellent dumpling filled with truffles in pate or sort of Foie gras make excellent brake and twist. Actually best dumpling ever 😅💪. On top of this great service and ok… a bit exaggerated with sort of church choirs music but make it unique almost saint atmosphere for ramen lovers 🙇‍♂️ Kudos!

  • The formerly Michelin-starred and now Michelin Bib Gourmand Ginza Hachigou was one of the most unique ramen experiences I had in Tokyo. This tiny six-seat counter in Ginza takes ramen to an entirely different level, combining Japanese technique with influences from French cuisine. The wait was definitely long. I first had to sign in and then received a ticket before waiting for my turn, so this is a place you need to have some patience for. Once I finally made it inside, though, the intimate counter and experience of watching the chef prepare each bowl made it feel incredibly special. I ordered the Ravioli Gourmandise Chuka Soba, the chef’s recommendation, and the standout was the French-style ravioli filled with truffle and foie gras. Once dipped into the beautiful clear broth, it added this incredible richness and aroma while still allowing the broth to remain delicate and refined. The chashu, seasoned egg, noodles, bamboo shoots, and green onion were all beautifully executed. Definitely not your everyday bowl of ramen. Between the French influence, tiny counter, chef-driven preparation, and history of Michelin recognition, Ginza Hachigou is an experience worth seeking out in Tokyo. Just be prepared for the wait!

  • So fortunate to snag a 2pm reservation here. One of the highlight meals of the trip for sure. Arrived about 10 minutes before and someone from the inside came out to take our order. We were able to order the ravioli gourmandise special, which was quite lucky since they only serve 30 per day. The broth has a really unique flavor, very hard to describe. A tiny bit salty on initial taste, but the more you eat it gets better. You are served pretty quickly after being seated, and you can watch Chef Matsumura complete the last finishing touches. Pork is unbelievably tender. Ravioli has a great but not overpowering truffle flavor. HIGHLY recommend ordering the pork rice bowl too to mix some of the broth in. Interior atmosphere and service were all wonderful. Payment is fully handled in the back-end if you reserve. If given the opportunity, would 100% visit again. Helpful tip: if you want to reserve, the window opens on Tabelog at Friday 5pm PST or 8pm EST (9am Saturday Japan time) for the following week. Have fast fingers, as it runs out much faster than you think...
