What truly stands out is his ability to seamlessly weave together the originality and soul of Peruvian cuisine with the elegance and purity of Japanese ingredients. The result is a menu that feels both culturally rich and strikingly modern—each course layered with depth, balance, and a quiet sophistication that unfolds beautifully over time. Equally exceptional is the beverage program led by sommelier Liz. Her wine pairing is not just complementary—it’s an education. She introduces rare and remarkable South American wines with incredible depth of knowledge, sharing the stories, regions, and craftsmanship behind each selection. It transforms the pairing into a journey, adding a whole new dimension to the dining experience. What makes MAZ stand out, beyond the cuisine and wine, is the cohesion of the team. Service is polished yet warm, attentive without ever feeling intrusive. There’s a genuine sense that everyone—from the kitchen to the floor—is aligned in delivering a seamless and memorable experience. MAZ is not just a restaurant; it’s a curated experience where culinary artistry, storytelling, and hospitality come together beautifully.   • We went to MAZ during our honeymoon trip to Tokyo. The meal was incredible - one of the best we’ve ever had! The inspiration behind the food (a story told during the meal) truly made the whole experience even more special. Highly recommend!!

  • aMAZing experience at this enigmatic restaurant in Tokyo. This is not the traditional type of Peruvian cuisine I am familiar with. There is a lot of science and arts behind the preparation of the meal. Conceptually, it is unique from all the Michelin restaurants I have tried. Some dishes wowed me, some were a little bit too strong for my palate and could have been balanced with some carbs to showcase their richness. The chef was very interactive and approachable, so were all the staff. Looking forward to the new menu. Note the noisy German group present that night, atypical from a fine dining experience in Tokyo

  • This restaurant is one of the most memorable I have ever visited. Despite having dined at Peruvian restaurants and other 2-Michelin star establishments before, I was still captivated by the excellent storytelling throughout the experience. The narrative included the origins of the ingredients and rich elements of South American culture, combined seamlessly with unique flavors and beautifully presented dishes. The chef began by introducing the ingredients sourced from Peru, setting the stage for our nine-course meal. Each dish was creatively named after different altitude levels, showcasing a diverse range of ingredients—from fresh seafood and highland-grown vegetables and fruits to various meats. Overall, it was a worthwhile visit, and the price was reasonable for a 2-Michelin star restaurant.
