Best Japanese in Central
Japanese cooking in Central, and a different discipline at every address. Sushi Shikon is Edomae sushi at its most exacting: eight seats at a centuries old hinoki counter in The Landmark Mandarin Oriental, three Michelin stars, fish aged for depth and produce flown in from Tokyo. Head chef Satoshi Tada trained under Masahiro Yoshitake. Leave the perfume at home. Nagamoto is kaiseki, from Kyoto born Teruhiko Nagamoto, whose single omakase runs ten to thirteen courses built on shun, ingredients at their seasonal peak; the katsuobushi is shaved in front of you. Torikaze is yakitori from Tokyo master Yoshiteru Ikegawa, whose motto is one skewer, one lifetime, with chef Ryo Matsui grilling local three yellow chicken over Kishu binchotan high in Gloucester Tower. The Aubrey is the outlier: an izakaya and cocktail bar on the 25th floor of Mandarin Oriental, with Edomae sushi on Hokkaido rice, wagyu off the robata, shochu cocktails and no bluefin tuna on the menu.
