Six nights a week, MAURI is one of Bali's most serious Italian dining rooms. On Sunday, it lets the daylight in. Chef Maurizio Bombini's Seminyak restaurant opens for brunch from 11.30am, and the kitchen that built the reputation cooks for a long, generous afternoon at the table.

Most people know MAURI after dark. White tablecloth energy, a wine list with a trophy cabinet, the kind of dinner you book for a reason. Sunday is the same room with the collar loosened. Same kitchen, same cellar, same standards. Just more sunlight, more noise, and nobody watching the clock.

The room, by daylight

MAURI opened on Jalan Petitenget in 2018 and has spent the years since becoming a reference point for fine Italian dining in Bali. Evenings here are calm and polished. Sunday runs on a different pulse.

The centrepiece is the glass-enclosed kitchen, which puts Chef Maurizio and his team in full view of the dining room. On a Sunday that window becomes the best seat in the house: plates being built, pasta being finished, the kitchen moving at brunch pace while the tables fill around it. Service keeps the polish MAURI is known for, but it reads warmer by day. Less ceremony, more conversation.

Puglia, on a plate

Chef Maurizio was born in Belgium to parents from Bisceglie, on the Puglian coast, and grew up in the family's restaurants along the Adriatic. From there came the De Cecco Institute in Pescara, then kitchens across Tuscany, Switzerland, Monte Carlo, Miami and Milan, a stint at Michel Rostang's two Michelin starred restaurant in Paris, and senior roles at The Ritz-Carlton Sanya, Il Ristorante at Bulgari Bali and Mandapa, a Ritz-Carlton Reserve, where he was Executive Chef.

MAURI is where all of that comes home.

"MAURI has always been about sharing where I come from through the language of food," says Chef Maurizio. "Puglia is simple, generous, and full of soul. At MAURI, we take that feeling and express it with the ingredients, technique, and care that define the restaurant today."

Sunday draws from the same playbook as dinner. Handmade pasta. Fresh seafood. Carefully sourced meats, seasonal vegetables and house-made bread. The philosophy is ingredient first, with technique there to support the produce rather than bury it. Puglia is a region built on olive oil, wheat, coastal catch and long tables, and brunch is where that last part really lands.

The pour

MAURI's wine program is the other half of the story. The list has been recognised by Wine Spectator every year since 2021, and MAURI was the first restaurant in Indonesia to become a Dom Pérignon Society member.

The trick is the Coravin Sparkling System, which lets the team pour rare vintages and special cuvées by the glass without committing the whole bottle. On a Sunday, that turns a glass of something properly special from an occasion into a very reasonable midday decision.

Who it's for

Sunday at MAURI suits anyone who has been meaning to try the restaurant but hasn't locked in a dinner. It suits families, friends who've earned a long lunch, and anyone who treats Sunday as the one day with no second booking.

It also makes sense within the wider family. MAURI sits alongside BONITO and Zia Tina in Chef Maurizio's La Famiglia group, and it remains the most refined expression of his cooking. Sunday brunch is the easiest way in.
